In the kitchen, chef Benjamin Rascalou, one of the restaurants' three founders, prepares an inventive cuisine fusing flavours and spices particularly dear to him. As with the many discoveries that punctuate a trip, dishes revealed and heightened by spices tell many stories that merge in the mouth: shrimp with a sweet potato mousseline, roasted lamb shank with lemon and rosemary, tabbouleh and cinnamon raita, as well as grilled salmon fillet in smoked paprika, zucchini and cauliflower cannelloni.
